BUILD your own collagen cookies

Ingredients:
  • 2 flax eggs (2 Tablespoon ground Flax seeds + 6 Tablespoons warm water)
  • 1/4 cup + 2 Tablespoons of your favorite liquid syrup
  • 1/2 cup of melted coconut oil (avocado, sunflower or your choice of oil. Just make sure it melted and cooled)
  • 2/3 cup Beyond seed butter or your favorite nut free butter
  • 2 Tablespoons of your favorite milk
  • 2 teaspoons vanilla extract
  • 2 cups Cassava flour
  • 1/2 teaspoon baking soda
  • 1/4 + 2 Tablespoons Collagen (Discount code- STEPHANIE15)
  • 1/2 teaspoons sea salt ( I use salt to top my cookies)
  • your favorite cookie toppings chocolate squares, mini marshmallows, cacao nibs and even dates!

Directions: Preheat your oven to 350
  1. In a large bowl add cassava flour, baking soda and collagen (add sea salt to the mix if you don't want to add to the top of the cookies). Mix well.
  2. Make your flax eggs and set aside for 5 minutes.
  3. Add syrup, oil, nut free butter, milk, vanilla and your flax egg. Mix until well incorporated.
  4. Now add your toppings. 3/4 cups of delicious toppings, you will have to get your hands dirty to kneed the dough so it is well incorporated. 
  5. On a parchment ready cookie sheet use a cookie scoop and BAKE for 10-12 minutes.
