BUILD your own collagen cookies
Ingredients:
Directions: Preheat your oven to 350
- 2 flax eggs (2 Tablespoon ground Flax seeds + 6 Tablespoons warm water)
- 1/4 cup + 2 Tablespoons of your favorite liquid syrup
- 1/2 cup of melted coconut oil (avocado, sunflower or your choice of oil. Just make sure it melted and cooled)
- 2/3 cup Beyond seed butter or your favorite nut free butter
- 2 Tablespoons of your favorite milk
- 2 teaspoons vanilla extract
- 2 cups Cassava flour
- 1/2 teaspoon baking soda
- 1/4 + 2 Tablespoons Collagen (Discount code- STEPHANIE15)
- 1/2 teaspoons sea salt ( I use salt to top my cookies)
- your favorite cookie toppings chocolate squares, mini marshmallows, cacao nibs and even dates!
Directions: Preheat your oven to 350
- In a large bowl add cassava flour, baking soda and collagen (add sea salt to the mix if you don't want to add to the top of the cookies). Mix well.
- Make your flax eggs and set aside for 5 minutes.
- Add syrup, oil, nut free butter, milk, vanilla and your flax egg. Mix until well incorporated.
- Now add your toppings. 3/4 cups of delicious toppings, you will have to get your hands dirty to kneed the dough so it is well incorporated.
- On a parchment ready cookie sheet use a cookie scoop and BAKE for 10-12 minutes.
