Chicken Tortilla Soup

TORTILLA STRIPS:
1. Cut tortillas and heat pan. Add a Tbsp of oil and cook strips until golden brown.
You can easily cut recipe in half!
- 2 lbs. Chicken (I used boneless thighs)
- 2 15oz. Black Beans
- 2cups frozen Corn
- 4 chopped Bell Peppers
- 1 chopped White Onion
- 2 cans Diced Tomato
- 4 minced Garlic Cloves
- 2 Tbsp Cumin
- 2 Tbsp Chili Powder (optional)
- 2 tsp Salt
- 4cups Chicken Broth
- 2 Tbsp Olive Oil
Directions:
- Add all ingredients to crockpot/ slow cooker except the tortilla strips.
- Cover cooker for 6 hours on low.
- Take chicken out and shred, then add back into crockpot.
- After you've finished cooking and ready to eat, add the tortilla strips and your choice of cheese.
