Chicken Tortilla Soup

Ingredients:
  • 2 lbs. Chicken (I used boneless thighs)
  • 2 15oz. Black Beans
  • 2cups frozen Corn
  • 4 chopped Bell Peppers
  • 1 chopped White Onion
  • 2 cans Diced Tomato
  • 4 minced Garlic Cloves
  • 2 Tbsp Cumin
  • 2 Tbsp Chili Powder (optional)
  • 2 tsp Salt
  • 4cups Chicken Broth
  • 2 Tbsp Olive Oil

Directions:
  1.  Add all ingredients to crockpot/ slow cooker except the tortilla strips.
  2.  Cover cooker for 6 hours on low.
  3.  Take chicken out and shred, then add back into crockpot.
  4.  After you've finished cooking and ready to eat, add the tortilla strips and your choice of cheese.

TORTILLA STRIPS:
1. Cut tortillas and heat pan. Add a Tbsp of oil and cook strips until golden brown.
