Coconut Flour Pancakes

2-4 Servings
- Paleo
- Grain Free
- Peanut & Treenut Free
- Dairy Free
- Soy Free
- Fish & Shellfish Free

​Ingredients:
  • 1/4 cup Coconut Flour
  • 1/2 tsp. Baking Powder
  • Pinch of Salt
  • 3 Tbsp. Coconut Oil (melted)
  • 1 Tbsp. Raw Honey
  • 3 Large Eggs
  • 1/3 cup Coconut Milk
  • 1/2 tsp. Vanilla Extract
1. Combine all dry ingredients and add wet ingredients. Whisk & blend until smooth.
2. Heat up a medium size skillet over medium-low heat. Pour 1/4 cup mixture into pan.
3. Cook until bottom has turned golden brown about 2 minutes, flip and cook for about 30sec to 1 minute.

Serve warm with your favorite toppings!
​I make a ton and reheat during the week for a fast and healthy snack.
