E-Z Carnitas

*You can easily cut this recipe in half
*One pot, no browing required
- No added oil
- Gluten Free
- Dairy Free
- Soy Free
- Egg Free
- Fish & Shellfish Free

Ingredients:
  • 4lbs. Pork shoulder (I bought mine at Costco)
  • 1cup Water
  • 1cup Dr.Zevia (you can choose soda)
  • 1 Orange, cut in 4's
  • 1 whole Serrano
  • 1/4 Red Onion (Do Not dice, place in as 1/4)
  • 4 tsp Kosher salt
  • 2 tsp Cumin
  • 2 tsp Garlic powder
  • 1 tsp Black pepper
  • 1 tsp Chili powder

Directions:
  1.  Add all ingredients to your pressure cooker/slow cooker.
  2.  Secure lid.
  3.  Slow cook on High for 5:30 hours.
  4.  When done, take meat out and shred with two forks or hands.
  5. ​ THROW OUT orange, serrano, and onion.
To Make Bowls:
Add red cabbage, red onion, avocado, and corn.

To Make Tacos:
Top with red cabbage and pico de gallo salsa.
Pico De Gallo Salsa Ingredients:
​Cilantro, diced tomato, lime and salt to taste.
