Paleo Protein Cookies

Preheat oven at 350
Bake 10-12 minutes
Approximately 100cal. per cookie

​Ingredients:
  • 2 eggs OR egg replacer*
  • 1 tsp Vanilla Extract
  • 3 Tbsp Coconut Oil (room temp)
  • 2 Tbsp Sunbutter
  • 1 tsp Baking Powder
  • 2 scoops Collagen
  • 1/4cup Cassava Flour
  • 1/4cup Tigernut Flour
  • 2 Tbsp Sweetner**

*Follow your egg replacer's insrtuctions; we use Namaste's
**I use Lakanto Powder Sugar

Directions:
  1.  Mix wet ingredients and add dry ingredients a little bit at a time.
  2.  Use a cookie scoop to scoop onto a silicon cookie sheet.
  3.  Use your hand to flatten the cookie dough on the baking sheet.

Remove from heat and let cool for about 5minutes.
Your can add 2 Tbsp dark chocolate chips if you're in the mood. I typically add 1 chunk to the top from Enjoy Life chocolate chunk.
