Paleo Protein Cookies
Preheat oven at 350
Bake 10-12 minutes
Approximately 100cal. per cookie
Ingredients:

Directions:
Remove from heat and let cool for about 5minutes.
Your can add 2 Tbsp dark chocolate chips if you're in the mood. I typically add 1 chunk to the top from Enjoy Life chocolate chunk.

- 2 eggs OR egg replacer*
- 1 tsp Vanilla Extract
- 3 Tbsp Coconut Oil (room temp)
- 2 Tbsp Sunbutter
- 1 tsp Baking Powder
- 2 scoops Collagen
- 1/4cup Cassava Flour
- 1/4cup Tigernut Flour
- 2 Tbsp Sweetner**

Directions:
- Mix wet ingredients and add dry ingredients a little bit at a time.
- Use a cookie scoop to scoop onto a silicon cookie sheet.
- Use your hand to flatten the cookie dough on the baking sheet.
