Sweet Potato

Potapas Taquitos

​Taquitos:
  • 2 Potapa packets
  • 3 Medium Sweet Potatos
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • Oil for frying
  • Toothpicks

  1.  Peel and cut sweet potatos. Place in a medium pot of cold water and place on stove over medium heat, Bring to a boil and cook until fork tender. Drain water, mash with fork or potato-masher. After, add salt and pepper and stir until well combined.
  2. Wrap the Potaps in a kitchen dishtowel and place in microwave for about 1 minute (until soft). Let cool until easy to handle. Add 2 Tspb of the mashed sweet potato and the roll and place toothpick to secure. 
  3.  In a medium skillet, heat oil over medium-high heat. With tongs, place taquitos (toothpick-side down) into skillet. Fry until golden brown (1-2 min). Remove and place onto paper towels. 
Salsa:
  • 1 15oz. Hatch green chile enchilada sauce (mild)
  • 1 bunch Cilantro
  • 1 Lime
  • 1 Jalapeño
  • 1 ripe Avocado

​      1. Place 15oz Hatch  mild sauce, cilantro, lime, jalapeño and avocado in blender. Blend on high until  smooth.
