Sweet Potato
Potapas Taquitos
Taquitos:
- 2 Potapa packets
- 3 Medium Sweet Potatos
- 1 tsp Salt
- 1/2 tsp Pepper
- Oil for frying
- Toothpicks
- Peel and cut sweet potatos. Place in a medium pot of cold water and place on stove over medium heat, Bring to a boil and cook until fork tender. Drain water, mash with fork or potato-masher. After, add salt and pepper and stir until well combined.
- Wrap the Potaps in a kitchen dishtowel and place in microwave for about 1 minute (until soft). Let cool until easy to handle. Add 2 Tspb of the mashed sweet potato and the roll and place toothpick to secure.
- In a medium skillet, heat oil over medium-high heat. With tongs, place taquitos (toothpick-side down) into skillet. Fry until golden brown (1-2 min). Remove and place onto paper towels.
Salsa:
1. Place 15oz Hatch mild sauce, cilantro, lime, jalapeño and avocado in blender. Blend on high until smooth.

- 1 15oz. Hatch green chile enchilada sauce (mild)
- 1 bunch Cilantro
- 1 Lime
- 1 Jalapeño
- 1 ripe Avocado
