I want to start off by saying the texture of the Potapas was perfectly soft right out of the bag that it could be rolled up. This type of texture isn't usually found in allergen-friendly products. Another great thing is that the potapas smell like potatoes! I decided to make sweet potato taquitos topped with a super simple cilantro-lime & avocado salsa. "Potapas are a new, adventurous potato alternative to flour and corn tortillas", which is a positive for those who have a wheat and corn allergy (Potapas.com). They are verified Gluten Free and Non-GMO and Kosher. Potapas are free from nuts, dairy, soy, corn and preservatives. However, if you are allergic to legumes, Potapas do contain Garbanzo Bean Flour, for protein. They are available in many independent markets in Southern California- such as, Sprouts, Jimbo's Market in San Diego, and Mother's Market. Potapas is the PERFECT tortilla alternative because they wont break, crumble, tear or crack. I really recommend Potapas! They have changed my taquito life!
