Slow Cooker Shredded Chicken
Fast and easy recipes are what we all dream of. So here is this amazing tasting versatile chicken recipe we can make to use in many different ways. We use it to make chicken quesadillas, tacos, tostadas, chicken enchilada casserole and chicken chile rellenos. Just add everything into the crockpot the night before and have lunch or dinner ready the next day.

Enjoy as a new family favorite in many different ways!
- 3lbs. Chicken (skinless, boneless) I like to use thighs and legs.
- 1/2 cup Water
- 2 Tbsp Oil if using chicken breast.(of choice) If using thighs only use 1 Tablespoon oil.
- 4 oz. Hatch Diced Green Chiles
- 1 Tbsp Chili Powder
- 1 1/2 Tbsp minced Garlic
- 1 tsp Fajita seasoning
- 1/3 cup Cilantro (add after chicken is cooked if desired)
Directions:
- Add everything but cilantro to your slow cooker.
- Set to slow cooker on LOW for 8 hours.
- Take chicken out of liquid and shred with 2 forks or hands.
- Reserve 1/2 cup liquid to add back to the shredded chicken to keep moist.
- Add 1/3 cup cilantro if desired.
