No Bake Sunbutter Cream Pi
Ingredients:
Enjoy your "Pi" and Happy Pi Day!
- 1 Gluten Free Chocolate Cookie Crust or Graham Cracker Crust
- 8 oz. cream cheese (room temp) or *Daiya Cream Cheese (vegan)
- 1/4 cup Granulated Sugar
- 1/3 cup Creamy Sunbutter
- 1 tsp. vanilla extract
- 8 oz. Cool Whip or *CocoWhip by SoDelicious (vegan)
- 2 cups of sunbutter cups chopped
- Mix cream cheese (daiya cream cheese), granulated sugar and sunbutter until smooth.
- Add in vanilla extract, beating until smooth and no lumps remain.
- Add in Cool Whip (SoDelicious Coco Whip) and then stir in 1 and 1/2 cups of the chopped sunbutter cups.**
- Add filling to the pie crust and sprinkle remaining sunbutter cups on top of the pie.
- Refrigerate for at least 4 hours before cutting and serving.
