Zego Mix in cookies

     Have you tried of Zego fruit bars yet? They are a healthy and tasty snack that meets everyone’s dietary needs. The Zego family was juggling Celiac Disease, lactose and gluten intolerances, food allergies, and low-glycemic diets. Then, their elementary school banned all nuts from campus. Suddenly 250 families had to accommodate their own dietary issues plus the need of the school. That's how Zego came to be. In addition Zego just had a Kickstarter for their new product Mix-Ins, it's a trail mix type of snack that contain dates, cranberries, pumpkin seeds, sunflower seeds and chia seeds that's it. So I partnered with Zego to bring you a top 8 free cookie that is refined sugar free and Paleo. They are soft and perfect I promise they wont disappoint!
Ingredients Needed
  • 1 cup Dairy free Butter (room temp)
  • 1/2 cup Maple (honey or agave)
  • 1/2 cup Date sugar (maple or coconut)
  • 2 teaspoons Vanilla
  • 2 Tablespoons Water
  • 240 grams of Cassava flour
  • 2 Tablespoons Gelatin (replace with your prefered egg replacer. Like a flax or chia egg)
  • 1 teaspoon Baking soda (make your own to make paleo)
  • 1 cup Zego Mix-ins

Directions- PREHEAT Oven to 350°
  1. In a medium bowl mix together butter, maple, sugar, vanilla and water, let sit for about 5 minutes.
  2. In a separate bowl mix in your flour, gelatin, baking soda and mix-ins.
  3. Mix wet and dry ingredients together, don't over mix..
  4. Scoop onto pre lined baking sheets (I use a 1.5 Tablespoon cookie scooper)
  5. Bake for 10-13 minutes. Our come out perfect at 10 minutes.
  6. Let them cool for about 5 minutes before moving carefully to a cooling rack and allowing them to cool. As the gelatin cools the harder the cookie gets so DON'T over bake them.
